The group standards released this time are proposed and managed by the China Inspection and Testing Society, covering multiple aspects such as personnel health, hygiene, training, equipment safety and hygiene management, material acceptance, storage, processing, sample retention, as well as safety and service, all of which provide clear and detailed guidance.
This standard specifies the basic requirements for the operation of central kitchens. The section on personnel health and hygiene management emphasizes the importance of the health status and hygiene habits of employees, and puts forward requirements for relevant training. In terms of equipment management, emphasis is placed on the safety, hygiene, and maintenance of equipment. The material management process has strict regulations on the acceptance, storage, sample retention, processing, and other processes of materials. There are also detailed requirements for environmental management, safety management, service management, and service quality control, ensuring the comprehensiveness and standardization of central kitchen services and management.
To promote the high-quality development of Jianliyuan, the group will start building a fresh food factory in Qingdao in 2022. At present, the nearly 30000 square meter fresh food factory project is about to be completed. During the construction process, Jianliyuan always adheres to high standards and strict requirements, striving to create a first-class fresh food production base. The release and implementation of standards not only provide a reference template for the industry, but also contribute to the standardization, normalization, construction, and management of Jianliyuan Fresh Food Factory.
Since 2012, Jianliyuan has participated in drafting 10 national standards, industry standards, and group standards, including the General Rules for Anti Food Waste Management in the Catering Industry, the Service Standards for Group Meal Management, and the Service Quality Standards for Group Meal Units.
